From the Riviera to the Rockies to Randolph's

Randolph's Restaurant and Bar is proud to present the masterful creations of its Culinary Team, led by
Executive Chef Jean Claude Cavalera.

         For the past 20 years, Cavalera owned a popular four-star restaurant in the front range area, Caroline's Cuisine, featuring upscale European dining. Cavalera plans to bring some of his signature recipes to Warwick Denver. New dishes will marry the finest local Colorado product with a strong European sensibility. A taste of his influence is already evident on Randolph's dinner menu, with the introduction of dishes like Classic Duck Confit, Mustard and Herb crusted Rack of Lamb with Pinot Noir jus and Filet Mignon with Brie Au Gratin (wrapped in pepper bacon, gratin du Brie and black truffle port sauce.) A new lunch menu is being developed for Randolph's, along with new banquet menus reflecting the cuisines of world-class cities.  A possible tropical menu to be featured exclusively at the rooftop pool is also in the prep line.           

          "The staff at Warwick Denver are the best, and I am excited to show more of my friends and neighbors in Denver that this isn't just a place for business travelers and downtown workers," said Cavalera. "Randolph's has a lovely ambiance and loyal following. I'm looking forward to making it a top spot in the city for food and libations.

            Cavalera graduated from culinary school in Nice on the French Riviera and served as a chef in the French army before becoming private chef to a wealthy private citizen. He worked at major hotels in Monte Carlo and at the Savoy in London before coming to the states.  In the U.S., Cavalera lead culinary teams for five-star luxury hotels on both coasts, including the cities of San Diego, Laguna Niguel, Georgetown and Boston. While in Boston, Cavalera worked with and became a friend of the legendary Julia Child.

         Cavalera's recipe for success doesn't end in the kitchen. He is a member of the Denver Chamber of Commerce, Chaine of the Rotisseurs (international gastronomic society in Paris), the American Culinary Federation and Les Amis d'Escofier Society (promoting the high standards of haute cuisine).
